Northern Italian White Bean Salad

Adapted from the Betty Crocker cookbook

-Vegan-

Prep: 15 minutes

Makes approx. 6 servings

  • 1 can white or cannellini beans, rinsed and drained
  • 1 large tomato (or a bunch of grape tomatoes), chopped
  • 1 red bell pepper, chopped
  • 1 onion (I used a sweet yellow onion.  Red would also work well), chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh chopped OR 2 teaspoons dried basil
  • 1/4 cup olive oil
  • 2 tablespoons wine vinegar
  • 1/2 tsp salt
  • pepper to taste
  • lettuce leaves (optional)
  1.  In a large bowl, mix together all the ingredients
  2. Eat!  Serve it alone, on lettuce leaves, or as a side dish.
  3. Cover and refrigerate the leftovers.
